Pumped / No-Kill Method

All Aquatir Classics are produced using the pumped, no-kill method. Eggs are gently extracted while the fish remains alive, allowing the sturgeon to continue producing roe every 1–2 years.

About the Sturgeon

Sturgeon are among the oldest living fish species, dating back over 200 million years. These slow-growing freshwater fish are raised with care and patience, which contributes to the premium quality of the caviar.

  • Lifespan: Up to 50–100 years

  • Time to egg maturity:

    • Sterlet: 7–9 years

    • Russian Sturgeon: 10–12 years

    • Beluga: 18–22 years

These long growth cycles are a defining factor in the caviar’s value and delicacy.

Storage & Handling

To maintain optimal quality and flavour:

  • Keep sealed until service

  • Always maintain the cold chain

  • Once opened, wrap tightly with cling film so it touches the caviar surface

  • Shelf life after opening:

    • Larger tins: 2–3 days

    • 10g tins: same-day consumption recommended

  • Never freeze caviar
