Classic & Premium:

Non-pasteurised caviar with minimal salting. Premium is hand-selected for grain uniformity, texture, and brilliance.

→ Shelf Life: 4 months (refrigerated)

Pasteurised (Lightly Salted):

Gently pasteurised for extended freshness and slightly firmer texture - without compromising flavour.

→ Shelf Life: 8 months (refrigerated)

Methods

Egg Extraction

Aquatir uses both non-lethal (pumped) and traditional (slaughtered) roe extraction techniques:

- Classic Pasteurised and non-Pasteurised offerings are typically pumped using non-lethal methods, ideal for sustainability-focused clients.

- Premium ranges are generally harvested via traditional extraction, allowing precise grading and full flavour retention.

Caviar Facts

From Egg to Elegance

Caviar is salt-cured roe from sturgeon, a species dating back more than 250 million years.

It takes between 5 and 12 years for different sturgeon species to mature and produce roe:

  • Beluga (Huso huso): 12+ years
  • Russian Sturgeon (A. gueldenstaedtii): 8–10 years
  • Bester (Beluga × Sterlet hybrid): 6–8 years
  • Sterlet (A. ruthenus): 5–6 years

True caviar always comes from sturgeon. Other types, such as salmon roe, are not considered real caviar.

Pasteurised caviar is lightly salted, preserving its natural flavour while extending shelf life.

Aquatir caviar contains no preservatives, antibiotics, GMOs, or hormones and is produced using fully sustainable aquaculture.

With a background in international travel, wellness, and hospitality, I’ve always had a passion for luxury experiences and high-quality products. After several years working across Southern Africa, I co-founded Aquatir SA to bring world-class black caviar directly to South Africa.

Aquatir SA was founded through a shared vision between myself and a seasoned entrepreneur, united by a commitment to excellence, transparency, and sustainability. We import directly from our trusted partner farm, Aquatir SRL in Moldova - ensuring traceability, ethical sourcing, and an uncompromising focus on taste.

From cold-chain logistics to culinary education, we curate every detail. Whether supplying restaurants, private chefs, or first-time clients, we treat every order as a premium experience.
