Aquatir's Sturgeon Complex is a state-of-the-art facility dedicated to breeding sturgeon species using the latest advancements and technologies in aquaculture. Our innovative approach ensures an environmentally friendly operation and optimizes the breeding process. To ensure the health and consistent productivity of our sturgeon, we use only premium feed enriched with essential micronutrients and vitamins. Our feed is free from hormones, antibiotics, and GMOs, guaranteeing a natural and sustainable approach to fish farming.
One of the key advantages of our company is our comprehensive technological cycle of fish breeding, which spans from eggs to mature, egg-producing sturgeon. Each fish is nurtured with care in a pristine, ecologically clean environment under the continuous supervision of our highly skilled specialists. Our fry are raised in exceptionally clean water sourced from artesian wells, which undergoes additional filtration to ensure purity
Our Recirculating Aquaculture System (RAS) is a modern, advanced setup where water circulates in a closed loop, maintaining essential parameters such as oxygen levels and temperature at optimal conditions. All stages of the growth process are automated through sophisticated monitoring and control systems, ensuring efficiency and consistency.
At Aquatir, we categorize our fry into two types: one group is raised for caviar production, while the other is used to replenish our broodstock. Beyond our own production needs, we are deeply committed to preserving viable fish populations and supporting the restoration of natural habitats.
In collaboration with the Institute of Zoology of the Republic of Moldova and under the guidance of international CITES specialists, Aquatir is actively involved in restocking efforts for the Dniester River. To date, our facility has successfully released over 50,000 Russian sturgeon fry back into their natural environment, contributing significantly to the revival of natural populations.

Every fish on our farm is meticulously cared for and has its own health passport. We continuously monitor their well-being through a comprehensive process that includes weighing, ultrasounds, visual inspections, and blood tests. At Aquatir, our core breeding principle is to treat each fish with the utmost care and respect, ensuring the growth of healthy and robust generations of sturgeon.
A defining feature of our black caviar is its purity—we use only salt, with no preservatives, antibiotics, or GMOs. Based on consumer preferences, the salt content in our caviar can range from 2.5% to 5%. Our caviar is crafted using traditional and time-honored techniques that ensure the exceptional quality for which it is renowned worldwide. These meticulous processing methods help preserve the unique flavor profile and beneficial qualities found in caviar from wild sturgeon.

Given the natural variation in color among sturgeon caviar, Aquatir maintains the integrity of each batch by never mixing caviar from different individual fish during salting and packaging.

Our facility boasts its own accredited laboratory, equipped with state-of-the-art technology, enabling us to conduct a wide range of research, including both physicochemical and microbiological analyses, in accordance with traditional GOST standards. This laboratory allows us to enhance our internal production controls and consistently verify the quality of our products
To ensure the highest safety standards, we perform rigorous veterinary, sanitary, and laboratory testing on every batch of raw materials, containers, and finished products. At Aquatir, we are deeply committed to the quality of our offerings and are continually investing in scientific advancements and stringent safety controls to maintain excellence.
In the final stage of production, each can of caviar undergoes a thorough inspection, labeling, and is then stored in a specialized caviar refrigerator that maintains the ideal temperature. The caviar, or 'fish roe,' is carefully washed in clean, chilled water to remove any burst eggs or fragments. The cleaned eggs are then quickly transferred to a sieve to drain excess water before being salted, weighed, and sorted by color and size.
Following this meticulous process, the caviar is promptly packed into glass or lacquered metal cans, which are hermetically sealed using a vacuum sealing machine to preserve freshness and quality.
